vegetable quandary

OK, so I just had dinner: a Gardenburger Griller - not as good as the originals - with beets and sauteed cabbage. I made a good move with a splash of tamari on the cabbage - sesame seeds would have been a nice touch, too.

Anyway, I'm getting a little maxed on vegetables and need more interesting ways to eat them. I'm mostly done with salad - I'm not a huge raw food fan anyway, and salad can be a little bitter. Sometimes it hits the spot, but not now.

I was thinking about bok choi, but I'm not sure what to do with them (besides sautee). I want new and exciting (and low-calorie, and easy & quick to prepare) things to do with vegetables.

Ideas??

I'm trying to get my 5-a-day!

Stir-frying is like saute-ing, huh?

Hmm. Sometimes, it's easy to just boil it juuuust so that it's cooked, and then we sprinkle some oil and soy sauce on it. =) Not a whole lot, but just enough for flavor. =) But if you're looking to not have oil in it at all, that won't work...arg...Almost all of the chinese veggies can be boiled or even steamed on top of rice, but we always tend to add a bit of oil on it, or with some meat next to it. =)
